Produced by Gonzalo Uribe at Finca Puerto Bello. This coffee is harvested following a strict ripeness criteria. The coffee is exposed to an aerobic fermentation for 20 hours before being pulped. Finally it is dried on concrete patios to the ideal moisture content.
This microlot is 100% Castillo. This variety was developed by the Federacion de Nacional Cafeteros (FNC) to be more productive and leaf rust resistant than Caturra.
Gonzalo’s farm is located in Pijao, Quindio. Quindio is a region which has historically produced large volumes of commodity coffees. In recent years, through experimentation in processing methods and varieties, Quindio has produced many coffees placing highly in the Cup of Excellence. In fact the 1st and 3rd placed winners in the 2018 COE were from Quindio.
