This coffee was carefully hand picked in order to use only the ripest cherries. Later, cherries were fermented for 48 hours with the pulp on inside plastic tanks, afterwards pulped and left to dry ferment for 48 hours inside plastic tanks, afterwards gently washed and placed on raised beds for 15 days until 10.5% moisture content was achieved.
Guillermo has been producing commercial coffee his whole life and this is the first time he has extended the fermentation phase in order to achieve new flavours. He is motivated to keep improving his quality in the coming years as thru specialty coffee he believes "Colombian coffee can survived as most people are giving up on coffee plantations due to cost of production and low prices".
