Melvin Joel Alonzo Morales is a second generation coffee farmer and is part of the COMSA Co-operative (Café Orgánico Marcala Sociedad Anónima), established in 2001 by a group of farmers that wanted to combine their communal strength to produce high quality coffee. They are set apart by their commitment to investing in organic production rather than the conventional. This move was very risky, as transitioning from conventional methods to organic can cause dramatic drops in production yield. Today, COMSA is over 1,200 members strong with a waiting list of producers wanting to join the organisation.
Washed coffee at Finca Californeo Junior begins with careful cherry selection and same-day depulping. Fermentation is typically 24 hours, after which the parchment is washed with fresh water and moved to Melvin’s solar driers to dry.
Melvin has practiced organic farm management for a long time, taking a naturally gifted location and fortifying it further with organic fertilizers, soil conservation, and protection of local plants and animals.
